PANCAKES WITH EGG FILLING





Ingredients:

v 350 g boiled potatoes
v 150 g flour
v fat
v salt



Filling:

v 4 hard-boiled eggs
v 150 g cooked potatoes
v 160 g mayonnaise
v 300 g mixed boiled vegetables
v 70g onion
v 30ml vinegar
v sour cream
v chili sauce
v salt
v pepper


Preparation:

First make potato pancakes. Cook the potatoes in shell, mash, mix the flour, salt and make the dough. Split the dough into several parts and  stretch each onto the floured surface. Fry them in the pan on both sides.
For the filling cut the hard-boiled eggs and potatoes into small pieces and mix with finely chopped onion and cooked vegetables. Mix mayonnaise with vinegar and after that add chopped eggs and vegetables. Add salt and stir again. Fill the pancakes, put them on a plate and cover them with the chili sauce and sour cream.
