Ingredients:
v 2 eggs
v 150 g powdered sugar
v 100 g butter
v 1 lemon
v 100 g ground biscuits
For coating:
v 100 g pistachios
Preparation:
Beat the whole eggs with sugar until stiff and cook on steam or over low heat until it thickens. Stir in butter, 1 lemon juice and peel and add just enough biscuits to make a medium-hard dough. Knead the dough and leave it in the fridge for at least 1 hour. Meanwhile, clean pistachios and grind them coarsely or finely chop. Take out the dough from the fridge and make it into balls. Roll them in the pistachios.
Mixture too wet with lemon juice added, I used a 250g pack of biscuits to get dough correct. Doesn't affect taste, still good. BTW I use a similar mixture for oblatne filling with grated dark chocolate added.
